Confiscated from the archives of Gale Woods Farm
- 2 c. cooked, chopped Beets (Secret!)
- ½ c. applesauce
1. Puree in blender until smooth.
2. Preheat oven to 350.
- 1 ½ c. sugar
- ½ c. oil
- ½ c. plain yogurt
- 3 eggs
3. Combine in a large mixing bowl. Beat with electric mixer for 2 minutes.
- ½ c. baking cocoa
- 1 ½ tsp. vanilla
4. Add along with pureed beets; beat another 90 seconds.
- 1 ½ c. flour
- 1 c. whole wheat flour
- 1 ½ tsp. baking soda
- ½ tsp. salt
- 1 tsp. ground cinnamon
- 1 c. chocolate chips
5. Gradually sift into the batter, mixing it in with a spoon. Stir only until it is well blended.
6. Pour into greased 9 x 13 pan or lined muffin tins. Bake until a toothpick comes out clean.
Makes 16-24 muffins
