Ingredients

  • 2 golden beets, unpeeled (about 8 ounces)
  • 1 teaspoon olive oil
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon black pepper

Directions

  1. Preheat the oven to 400°F. Rub the beets with the oil, salt, and pepper. Wrap in foil.
  2. Roast at 400°F until tender when pierced with a fork, about 1 hour. Let stand until cool enough to handle. Peel and discard the skins.
  3. Refrigerate until needed.
