Source: Simply in Season

  • 2 c. winter squash or pumpkin, cooked and pureed.
  • 1 ½ c. sugar
  • ¾ c. oil
  • 4 eggs
  • 1 tsp vanilla
  • ½ tsp salt
  1. Beat together in a mixing bowl.
    • 1 c. flour
    • 1 c. whole wheat flour
    • 2 tsp baking powder
    • 1 tsp baking soda
    • 1 tsp cinnamon
  2. Mix in to the bowl.
  3. Pour into lightly greased 11 x 17” jelly roll pan.
  4. Bake in preheated oven at 350° for 25-30 minutes.

Yields 24 bars.
