Ingredients
- 5 oz arugula
- ½ c. mayonnaise
- 3 garlic cloves, minced
- 1 shallot or sweet onion, minced
- 1 TB fresh lemon juice
- 1 ½ tsp honey
- ½ c. chopped fresh parsley
- salt and pepper to taste
1. Place all ingredients in a blender or food processoor. Process until smooth.
2. Serve as a dip with veggies or shrimp.
